The perfect stack: everything you need to know about pancakes
Jul 07, 2026The perfect stack: everything you need to know about pancakes
Fluffy, golden, and endlessly satisfying — pancakes are one of those rare dishes that feel both effortless and special at the same time.
Why pancakes never get old
There's something almost universal about pancakes. Whether you grew up with thick American-style stacks drenched in maple syrup, thin French crêpes rolled with jam, or pillowy Japanese souffle pancakes, the concept is the same: a simple batter, a hot pan, and a few minutes of patience.
That simplicity is exactly what makes them timeless. You don't need fancy equipment or hard-to-find ingredients. Flour, eggs, milk, a pinch of salt — and you're most of the way there.
Don't overmix the batter. A few lumps are completely fine — overmixing develops gluten and leads to tough, chewy pancakes instead of light, fluffy ones. Stir just until combined and let the batter rest for 5 minutes before cooking.
Getting the flip right
The most common mistake is flipping too early. Wait until bubbles form across the surface of the pancake and the edges look set — usually about 2 minutes on medium heat. A confident, swift flip is better than a hesitant one. And resist the urge to press down on the pancake after flipping; that squeezes out all the air you just built up.
The second side always cooks faster, so keep an eye on it. Golden brown on both sides, and you're done.
The toppings are half the fun
Classic maple syrup and butter will never steer you wrong. But pancakes are also a great canvas for whatever's in season — fresh berries in summer, sliced bananas any time of year, or a spoonful of peanut butter for something a little more indulgent. A light dusting of powdered sugar is all you need if you want to keep it simple.
However you top them, the best pancakes are the ones you make and eat right away — straight off the pan, still steaming.
